what's the difference between the three downloads?

First link seems to be the Japanese dlsite version which has mosaic censor.
Second link is the game uncensored and ENG subtitles, also an ENG dub option for the witch section. The title was also changed to Hero's Journey for some reason but it's the exact same game.
Third link was the last Patreon beta version which is uncensored but outdated.

Haven't tried them myself but that's what they appear to be.
I'm pretty sure the DLsite version (first link) also has the ENG language stuff and it's pretty easy to find the uncensor patch but the 2nd link probably has it preapplied.

In the current version there's three now. Dealer the Witch, your sister Alice, and the merchant Herba. Though Dealer doesn't show up in the current version except for the intro.

Thats UTW Beginnings. UTW Gothic is a separate standalone game
