Not if you call them something else, or just make enough changes to make it clear, that it is not the same. You just have to make it kind of obvious.
Akabur uses Disney stuff in his games all the time, but it is a porn parody, so he is safe. There are like half a dozen GoT games here, and G.RR Martin notoriously even hates fanfics, but he can't do anything about it, because the law is clear. There is a ton of precedent. Parody is fair use.

perveteer had twi'lek lookalike in his game but he changed asset a bit.

As a general rule of UI design: Little to no colour on your text (either near black or near white, with the background being the opposite. The closer you are to black or white on the background, the more wiggle room you have on text (ex. including bright colours like yellow)
For space themed games like star wars, this usually means light text on black/near black background (ex. opening scrawl of the movies is yellow on black)
It is also always good to place function over form, especially early in development. Make it really easy to read, then worry later about making it pretty. (really bad offender for this is the skills screen (at least the old one. Haven't tried the new one))

latest version was more graphics and text test version (dev posted it some time ago) but still same content as version in op.

We are talking about the more or less last generation of Mandalorian combat armor.
The armor it self is nothing "Boba Fett specific" in fact Boba was just one of many that used and wore that armor.
Mostly used by mandalorians, and crafted in fact by mandalorians.
But it is very sought after by people that value a good armor protection combined with a excelent mobility.
In old Star Wars RPG lore it was one of the best medium armors available in the universe.
The most noticable difference of the Armors from the Old Republic time to "nowadays" modern armor design is the helmet and the reduction of plate (Hard armor) components in favor of more flexible leather or cloth type armoring.
While not really acurate,
this kind of give a rough overview of the evolution.

Well, Mandalorian is imho one of the least invasive.
Ok, they fucked up Luke, ok, they kinda made the mandalorians look like a bunch of brainless sectists ...
But compared to the newest 3 cinema movies ... it was golden.
And I ain't even going to start about what they did to Obi-Wan ...
