For the pocket, spell use detect magic in your room and the mirror will glow and then you can enter the mirror. The spell is located within.
The ritual spell is gained inside the Shapeshifters' temples. Specifically, you need the item in the big chest of the first temple, and then find a secret passage after you finish the second temple and go back to it (You can check these temples in the walkthrough for more details).

had to ask because with her Black clothes she would make a great Vampire,I mean she even becomes a Countess in a always overcast rainy County of Golden Leaf. Talk about perfect Vampire location, where the sun is always hidden behind the rainy clouds.

If you stumbled upon it without following the rest of the quest first, it's a bug in version 0.9993, and as such it might not make a lot of sense. You should probably go back to an earlier save, if that's the case.
It takes a while. You must be a member of one of the guilds, and in chapter 2 you should hear about a noble gone missing. If you investigate and save the noble, you'll get a chance to become a noble afterward. As a noble (in chapter 4, if I remember correctly) you'll get an offer to expand the town and if you pick the Zanti family as the sponsor, you'll get the maids. You should search the walkthrough for more details (it's linked in the game folder).
