oh wow all my save suddenly change to same one which is on day 1 when i finish a quest which i never saved. the save is beyond broken.
I actually have the same problem : the save parts load every time on day 1, even if i've already completed many quests :/

Saving is known to be bugged (among other things), but the first quick save slot might work better.

Even with dragon glass, the bear doesn't seem to go down. what to do?

And I think the winter Cloak is 3 hide and leather straps. To get the hide just pur rabbit fur in the crafting window
Saving in Quick Save Slot 1 doesn't work, or at least not consistently.
Tried it about 4 different times and it restores my save to a random load point in my game. Definitely don't rely on it.
