I would guess it's because it's a harem mod, so all girls get included. But ofc IDK for sure. It's been 2½ years since he last did the mod. I wouldn't expect it to get updated with a change, or at least not any time soon.

Did the mod allow players to turn down any or all the other girls except for Crystal? If so, then he missed the coffee shop scene. ( I don't use mods or downloaded the latest update yet, otherwise I can easily verify this ).
Otherwise, as per -CookieMonster666- said, and the mod description provided by Zoey Raven,
The harem Mod like all Zoey Raven's mods basically implies that it is a catch-all case, no girls left behind mode
, but you can always wait for his direct response ( which may take a while because he has his own game that is in active development, including mods ).

Ah, I see. I didn't pay that much attention b/c I don't use mods. So hopefully he replies sometime soon. He's been working on his own game for a bit now, so I'm surprised he'd take the time to update his mod. But I guess he did and it looks like he's been updating a lot of his mods recently. Good luck.

Does Sancho's mod allow you to do that? Or is that just in the main game script that you can't turn Crystal down?

Forced acceptance of Crystal at least has to be part of Zoey's mod (if it is indeed forced; don't know for sure). In the normal (unmodded) game, you can easily turn Crystal down if you want to. I have no idea whether Sancho's mod allows that or not.
