The fate of Jess carrying over from GGGB seems like a barometer on some of Lena's choices so far. Accepting Seymour's help gets Good Jess who ended up with Dave and refusing Seymour gets Good Jess who ended up with Ashley. Some choices get you failed pornstar Bad Jess too.

For me Holly is the best character in the game and the best option for Ian but I also like Cindy and it would be interesting to have a story with both of them...

Not currently at least, since in order to start relationship with Cindy you have to give up on a trip which starts relationship with Holly.
Not sure but i don't think so, it seems if Ian starts relationship with Holly then Lena automatically backs off to avoid messing things up for them. But that's what it seems like from tidbits in the game script, i haven't had Ian pursue Holly in my game so i didn't look too deep into it (since not attending friend's birthday and especially when Cindy had asked him to just didn't seem like something Ian would do)

you control the relationships of both MCs so yes. With the exception of if you pursue Cindy, who already has a BF. but in that case you're the ntr'ing the boyfriend, she's still with him depending on your choices. But for everyone, if you want them to just be yours then the choices are pretty straight forward.

Yes. Though if you already consider it NTR if another men fucks a potential love interest, keep in mind that you have to show a level of interest in the girls. Don't blame them if they go for other man in that case. Though overall the game encourages you to pair everyone up with different characters in each walkthrough, rather than going out of its way to punish you. The game can be mean-spirited, but it is mostly by your own choice.
Sign up for Stalkerfap as Lena, be as crude on SF as possible and be nice + raunchy towards Stan every chance you get. I assume as much at least, as I haven't played through the Stan path. Just looked at some code and images in the build folders. But it's pretty straightforward. It'll happen at near/at the end of chapter 10.
