I understand the feeling, lots of things to do, though there isn't much things too hard to get, but if you have some troubles, I invite you to have a look at the walkthrough pdf from hermesh or mod from JokerLeader, maybe it'll help you navigate more easily.

I don't believe that you can get it later. As I understand it, the characters from the dating pool who did not get chosen for the date will be excluded in future. That is, if I understood Zorlun correctly.
You have to choose her first, when Myriam answers well wishers after returning from hospital. If you don't do that, then it doesn't matter how many times you previously interacted with her, you won't go on a date with her. And probably won't have any further content with her. So if you didn't make that choice, I suggest you go back and do it.

I didn't take the cops either because I think they are both arseholes anyway and didn't have Charles either, she's already fucked him at the museum, didn't make a save for Nubia cause Myriam already has a date set with her for the following week. I got saves for all the others though.
If you don't choose Nubia at this point, Myriam won't go on any subsequent dates with her. If you want content with her in the future, you'll need to make a save here. When you make a choice at this point, it effectively rules out any further sexual content with the other eight characters.

I arranged a dinner date with Nubia when Myriam met her at the spa. Has Zorlun actually said there will only be one LI after these dates and whoever you choose is the only one going forward?
Yes, he did say something to that effect. The quote below was in response to someone asking if going on a date with one LI locks you out of the other LIs, going forward.
But he seems to have left himself some wiggle room, with his comment about "case by case." So I guess we'll have to wait and see to be sure, unless Zorlun gives us some clarification.
My understanding is that who you pick here only affects this one date and you'll be able to see whoever you want afterwards like normal. Sort of like deciding wheter you want to go out with the cops or stay home and watch movies with Kim. You can't do both since they happen at the same time.
Zorlun said pretty much the opposite of this. He said that this date is when things start getting exclusive for Myriam, as far as dating goes. Whoever is chosen for this date will rule out most or all of the others who weren't chosen.
That's not what he said to me, when I asked him about it. He said what 'The Lecher' says above. And I have a feeling that Nubia will be one of those ruled out, because she's not like Cleavon, Lucy or Dave for example, who are all part of other ongoing storylines. As it stands, Charles, Nubia, Crystal or Kimberly are not part of any other storylines. It may be that some of the 'date' characters do have additional sex scenes, but Zorlun's statement is casting quite a bit of doubt on that possibility.
I can see, out of the date choices , the only LIs realistically could be Dave or Lucy, the cops one is married and the other is a complete arsehole, Charles is not a relationship guy, he's a player, same with Nubia really, Cleavon is basically her boss so there's a conflict between her teacher role and her love life. The only other date options where Myriam could possibly have some sort of relationship with are Crystal and Kimberley, but more as a sort of 'mother figure', she still feels guilty about what happened to Kimberley and with Crystal she could take the porn route doing mother / daughter stuff.
Well I did the same thing, which is why I asked him about it, because it looked to me like those nine characters were becoming exclusive. I hoped that he would suggest the opposite, because I'd much prefer if she could date all or most of them simultaneously. But it looks like Zorlun doesn't want that. For the love interests at least, she can only date one of them at a time. Whether that means she'll eventually have the choice to try other options, I don't know? But for the time being, it looks like you'll be restricted to just one of those nine characters. Outside of those nine characters though, she'll continue to have other sexual encounters, with other existing or new characters.
