Shion doesn't like hers for obvious reasons if you read the description, Seija's got some "REVERSED" cooking attribute shenanigans going on that I haven't quite figured out yet. Checking abilities->preferences->Favorite flavors section can help with figuring some of this stuff out.
Some of them do, some will also comment on when you cook said signature dish with them. I remember that Hatater-tots comments on most of the dishes you can cook together and when she eats them so I wound up going through the entire food list and had a bit of fun reading all the different dialogues. Might be difficult if you can't translate it though.

On character customization you can make yourself a trap or any other gender. You can also influence the gender of your lackeys when playing as a Special Faction. Whatever "Sex" you set for your Faction, the SuccubusA, SuccubusB, SuccubusC type characters seem to follow. I think you used to be able to make them crossdressers, but that option seems to have been removed. You may be able to turn men into traps just by giving them women's clothes, I dunno how that works.
Finally if you don't mind cheating: Clicking the double stars that bracket the "All sorts of options are available here" text in the settings menu unlocks the cheat menu. Go into "Edit an individual character", choose a character, and you can change their sex and pretty much anything else about them. I recommend not getting too comfy changing shit in there because it will reduce enjoyment of the game, but just changing gender is fairly harmless, especially since I don't know if you can change a character to a trap naturally.
Yeah I can't stand that shit. When a game tells you how you/your character feels, it's part of the reason why I have trouble getting into TiTs and playing CoC anymore. Like the game might as well play itself at that point if you have no say over how your character is supposed to feel or think/act. Thankfully in TW, most of those responses seem to be toggleable. There are a few introductions I remember that has you "think" about raping various girls with time stop, which kind of annoyed me. The MC does it with Sakuya's introduction.

By the way I just realized, does dessert have some hidden mechanic? Most character like eating dessert despite hating sweet. Sure dessert usually have few bad traits, but it shouldn't gain more than 80 score when snack with similar traits fail to break 60 score.

Completely agree here. There's a lot of questionable choices in this regard, my guess is they're just trying to shove "REALISM" into game waifu stuff where they make every female over the age of 20 has had dozens of partners before they met you despite the fact the series has a strong absence of notable male characters, not counting civilians who've blended into the background of course.
The only ones we really know who have priors are characters like Junko(directly based on mythological character lore reasons, the other characters who made descendants also have this excuse), The Lunarian sisters also have husbands we've never seen so them too, that sort of thing, just the ones who have it canonically are fine.
Don't know why they're compelled to do it for the characters who don't.
Because of this I usually just set everyone to virgin mode anyways to do my best to ignore the "but muh headcanon" those fucks choose for characters with unestablished relationships, I find the passive aggressive implications in the body information section if you do this for the ones they've flagged as such hilarious, the ironic thing is I'm not interested in any of the ones that ACTUALLY AREN'T virgins, so go figure. Fuck em.
Hopefully when more characters actually get dialogue they don't get the same treatment, I know there's a lot of newer 2hus still pending on what they're deciding to do.

I tried Flans optional dialogue very briefly, don't think I went through most of it to see what people are complaining about (mostly because it wasn't translated and seemed like a pain in the ass when I already liked her current translated dialogue, plus at the time I was updating and she was already at love mode, so I presumably skipped the worst of it), but when the between days guilt tripping dialogue started showing up because I spent a week or so away, I switched immediately back to "sunshine girl" mode.
Feel free to illuminate us on what's bad about it though so more people know what they're getting into.

Joon IS a haughty tsun-tsun type that is also a pugilist who probably also does the Ojou-sama laugh who can be a bit mean whose magic ability is forcibly making people spend a lot of money, all of those things are an acquired taste let alone rolled into one character. She's not that bad in my book, probably because most 2hus generally redeem themselves or at least tone it down after their initial incidents.
