Anyone have recommendations as to what I should do if I'm not used to all these mods and junk? Should I just download from the unmolested from OP and that'll be the end of it, or am I missing out if I don't try and mess with or apply all the extra's or this newer version that's mentioned at the top of this page.

Get the 3.0.22 game from here, while you getting the translation patch and maybe the modpack check the info.txt and modpack info.txt files there. They tell you what's included, so you can see if there's anything in the modpack you want.

The MEGA folders are where the mod makers keep their bits and pieces, the others self explanatory. You only really want to use them if you want to make (and keep up to date) a copy of 3.0.22 and the latest available mods.

Should be able to. There is a port of the modded 2.5.2 from the opening post, or a ageing 3.0.22 one.

Himiko-S always made a new post for a port update, at the time it was better to check their posts. And now maybe better to use JoiPlay, but I don't really know. Last time I suggested a change to the opening post it didn't go well.

That is the latest proper version of the game, with the link to get the latest (updated early last week) translation patch and mod pack for it. There is a 4β version, but it is a real beta version and the patch makers are ignoring it.
