yeah things has changed and when it comes to starting a new game or someone playing it for the first time and following it, the content wont line up, so it's best to use it as an reference and don't worry about the week and day.
The events and jobs are random, so you will have to keep trying to get one to pop up, if you don't get an random event or a job to trigger, here is what you can try
-- save your game before the time of an random event or getting a photoshoot job on the phone. Example photoshoot or an event at 15:00, save at 13:00 or 14:00
-- at 15:00, try to get a photoshoot job or that random event to trigger, if you don't get one, reload the save then try
-- or try the next day and don't worry about the week and day
