As far as the MC goes, remember this: Studio FOW are animators, not game designers. They do fixed scenes with fixed characters and that's it. So it should be no surprise that the MC is a fixed character stuck in a fixed plot with fixed dialog. Options & choices fall under the realm of game design, which is something that they had no experience with until now.
That this should play out like a long series of Studio FOW animations sprinkled with some minigames to act as speedbumps shouldn't surprise anyone. It's like when Bethesda made Fallout76. Sure they knew Fallout, but had they ever even tried to do a MMO before?
The game you want doesn't exist but I can tell you how it could: If, instead of trying to do everything themselves, Studio FOW teamed up with an experienced game developer to create something grand. Let the veteran game designer work out the mechanics, the open world, the character customization, dialog and plot... and let Studio FOW make great animations to go with it.
Of course it's too late now, but maybe if they do a sequel they'll keep that idea in mind.
