I really liked this game and even bought it when it was fully released. However, I liked the chibi style art that was in the earlier demos better than the final version.

Well, from time to time, i go on the discord to see what the fuck is happening there, and this is MY GUESS from what I read there.
For a surprise that it's not a surprise, pretty sure the game won't be released this year. That dude "Frost" on the discord keeps saying thah first will come a demo then the game, so, the game has a release date for 2024, why would you release a demo if you'll have to drop the game like in the next month. Also he talks about a demo that it has no date too.
So what will happen then? Well, they'll change the release date on the steam page near end of the year and drop a post saying they sorry that they could not fullfil they promised deadline and thus this they'll change it for "TBD/TBA" or maybe next year.
But yes, surely we won't see the game done this year.

Highly probable but at this point I would honestly question if its even ever going to come out. Godot is not exactly easy development mode like RPG maker but it certainly is not demanding enough to justify this long of a development cycle for a already written visual novel.
The pace at which they are going is horrid for a solo dev let alone a team with some funding. At the very least the first day demo should have been out for months at this point. Its equally likely at this juncture that come Christmas they will just quietly cancel it.

I just wanted the Overwhored dlc that never came, that later got pushed into a whole sequel, that later was revealed to be planned to be a VR game 3d game (?), that later got used only to test the VR, that later was put on hold for Tropical daze, Tropical Daze got put on hold for a remake of Snow Daze, and then Snow daze remake has been in development for over 4 years.

It has every day since it was released almost 4 years ago. It will not get fixed, either.
Here is the thing. If they were making Snow Daze Plus all of that would be perfectly sensible. Something along the lines of expanding each day with a couple of extra interactions or adding post game content of sorts, maybe even adding some tropical daze stuff. Making the game operate in 3D space even when using all 2D assets would make those kinds of additions easier and less prone to bugs.
However they are obviously not doing anything of the sorts so its really just wasted effort at best or a straight up scam at worst. Either way I personally blame Patreon and Subscribe star for not having a stricter policy regarding this sort of stuff. Things can get off track in development but by my count Cypress Zeta is cumulatively a decade behind his own schedule.
