anyone know what actually changes when you change the relationship? from normal, lustier, platonic?

Normal is how game was before that setting was added, Sylvie's lust will will go up and down. Lustier will stop her lust from dropping. And platonic is exactly as it sounds, no sexy stuff.

heyo... i have 3k+ intimacy and 2k+ lust, is there anything new to unlock at this point? i go to shop everyday but there's no new clothing or anything (´._.`).｡oஇ()

Think you have everything. There is a fair bit of unused space in the shop menu, especially with the night version.

The next update should hopefully be soon. But there probably won't be new content, just a engine and UI update. And no idea when another will happen after.
